According to researchers at the University of Finland, adding plant sterols to high fiber rye bread may help reduce cholesterol. The findings of their study were published in the January 2010 issue of Nutrition, Metabolism and Cardiovascular Disease.
For the study 68 participants were randomly assigned to receive either a rye bread with added plant sterols (in either 2 grams per day or 4 grams per day) or one without any plant sterol (control group) for two weeks.
The researchers found that 2 grams of plant sterols resulted in an 8.1% reduction in LDL (bad) cholesterol levels. Increasing the plant sterols dose to 4 grams reduced cholesterol by over 10%. Conversely, rye bread alone had no effect on cholesterol levels.
Plant sterols have been shown to reduce cholesterol levels in previous studies. These new findings suggest that rye bread may be an effective carrier of these beneficial compounds.
